Go for the White Veggies as Much as You Go for the Colorful Ones

A new study has said that consuming white vegetables provides as much nutrition as consuming the colorful ones, so one must not forgo eating them.Not many may know that the humble looking potato is an important source of many vitamin and minerals. Nutritionists said that white veggies are good for health and high on nutrition, so it is good to include them in the diet. "It's recommended that the variety of fruits and vegetables consumed daily should include dark green and orange vegetables, but no such recommendation exists for white vegetables, even though they are rich in fiber, potassium and magnesium. Overall, Americans are not eating enough vegetables, and promoting white vegetables, some of which are common and affordable, may be a pathway to increasing vegetable consumption in general," said an expert in nutrition science. 
The team found that white vegetables can help enhance the intake of fiber, potassium and magnesium, and help improve overall vegetable consumption among children, teens and adults. 
Nutritionists underlined the health benefits of many white vegetables like onions cauliflower, mushroom, turnip, and Kohlrabi. The study also found that the color does not actually have any bearing on the nutritive value of a vegetable. 
"Even without its skin, the flesh of the white potato is a potassium powerhouse. Just one cup (122 g) of baked potato without the skin provides 477 mg potassium," the researchers said.
