Celery is rich in the flavonoid luteolin which, in this study, was seen to kill up to 39% of human liver cancer cells after 24 hours by inducing programmed cell death (apoptosis). But does this lab result have relevance for people? A recent population study out of China suggests yes: men and women eating more than 12 grams of celery per day had a staggering 70% reduction in liver cancer risk—and that was for people with a history of liver disease (liver cancer is extremely rare without prior liver disease). What’s truly impressive with this result is that 12 grams daily amounts to little more than a single 80 gram serving of celery per week. But you may want to eat more than that, since another study showed that eating 2-3 servings of celery per week reduces lung cancer risk by 60%. Celery has other remarkable health benefits: its luteolin may keep you looking younger because it protects against photo-aging of the skin. And for those needing a boost to their mood, celery is the perfect low-calorie snack: a new study out of Denmark showed celery (leaves) may actually boost adrenalin levels due to their natural MAO (monoamine oxidase) activity. Once again science confirms that eating a diet rich in vegetables, fruit and whole foods can bring truly amazing health benefits.
